Wild Alaskan Salmon with Spinach and Mixed Green Salad

Today I decided to make wild Alaskan salmon with spinach and a mixed greens salad which has very little prep time.  I always make sure I have individually packaged wild salmon (why wild? Check this link out: Why Wild is better! ) fillets in the freezer for quick lunches.  My favourite brand is Icy Strait Seafood which I buy at Whole Foods.  Once defrosted it tastes as good as any other fresh fish you can buy.  Wild salmon is hard to find fresh and is usually available only when in season.  To defrost a fillet quickly place the fillet in a bowl (still in package) under cold running water for 15 minutes. 



I season the fish (sea salt, crushed pepper and garlic) and cook it in a pan on the stove.  Using very little olive oil I pan fry in on medium heat, 4-5 minutes per side.  Start with the side without skin.
 



I decided to saute some organic spinach I had in the fridge.  I used a tsp of olive oil and fresh garlic and sea salt to season.






My husband's aunt has all sorts of greens growing in her garden (I love spring greens!!) that she sent over to us - delicious for a nice green salad.  I added some tomatoes, fresh garlic and seasoning.


I make my salads the simple way with simple ingredients: sea salt, freshly crushed pepper, extra-virgin olive oil, fig-infused white balsamic vinegar and a splash of natural apple cider vinegar.
